HISTORY
From ancient cave drawings to biblical scripture goat milk has been depicted as a vital source of nutrition to mankind, even today in these modern times, globally more goat's milk is consumed by humans than from any other livestock. The UN Food and Agriculture Organization estimate humans use 4.8 million tons of goat milk annually and with good reason.
HABITAT & DIET
Goats can be found living in most regions of the world, they are quite adaptable and forgiving coupled by their small stature making them best suited for superb dairy and meat production even on small or rocky parcels of land.
At Hollybrook dairy our goats are fed only the finest grains, hay, alfalfa, free choice minerals, natural foliage and vegetation consisting mostly of kudzu, tulip poplar, blackberry, rye and wild grape vines.
Contrary to popular belief goats do not eat tin cans, they are actually quite picky about their food, in fact unlike cows and sheep, goat's do not like to eat off the ground, which is where many bacteria and parasites such as e-coli, streptococci and staphylococci live. Feed wise pound for pound a goat will produce more milk than cow's so it's not necessary to pump our goat's full of antibiotics or growth hormones!
COMPOSITION
Keep it simple stupid, OK I hear you but, just like for you to picture a stand of DNA, these are similar in structure as the chains of protein and amino acids that are vital for human growth and brain development. The protein chains and fat globules in goat milk are shorter, more digestible because the fat is smaller, more easily assmeilated and closer to human breast milk than cow's milk, more so in fact that 90% of people that are lactose intolerant can easily drink and digest. It is also particualrly rich in anitbody's and when freshly drawn has a much lower bacterial count.

Homogenization & Pasteurization
As stated above goat milk's fat gobules are small and easily digested by humans, however cow milk isn't it must be homogenized in order to be more digestible and prevent cream separation during transport and extended shelf life.
During this process milk is forced under pressure at very high speeds then shot into tiny screens causing the fat to shatter, the process is so violent once separated the gobule's will remain separated and suspended indefinitely.
